Recipe: Caribbean-inspired Christmas brownie
Here’s a stunning recipe you can try at home to wow your guests this holiday season:
Ingredients:
- 200g dark or semi-sweet chocolate, chopped
- 150g butter or coconut oil
- 200g sugar (maybe a mix of brown and white sugar)
- 3 large eggs
- 100g Plain flour
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp allspice
- 100g dried tropical fruits (mango, pineapple, papaya), chopped
- 50g toasted pecans, macadamia, or cashews, chopped
- 50g shredded or toasted coconut
- 100g chocolate chunks or chips
- Optional: 2 tbsp rum or 1 tsp rum extract
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 180°C (350°F) and line a baking pan with parchment paper.
- Melt chocolate and butter (or coconut oil) together, then stir in sugar until smooth.
- Beat in eggs one at a time, followed by vanilla extract.
