Makes 8 vegan pastie
For the pasty you will need to make a wholemeal vegan puff pastry, vegan bechamel and your filling! So let’s get started!
The everyday home relationships which once existed in a utopia realm of oh so fleeting moments are now been challenged. During this crisis one would think that this is the perfect time to focus on:
Vegan puff pastry:
- white strong flour (310g)
- Whole meal flour (330g
- Water (36ml)
- Salt (6g)
- Vegan butter (400g)
- Golden syrup (20g)
- Water (20g)
- White sesame seeds (20g)
Mix everything except for the butter and leave to rest for 30min.
Stretch your dough and apply the butter in the middle, make 1 double book fold and then 1 book fold.
Every fold should be rolled down to 8mm in thickness.
Leave to rest for 30 min and repeat the same folds as above. Leave to rest for 30 min. While that rests make the vegan béchamel.
Vegan béchamel:
- Yellow pepper (265g)
- Red pepper (265g)
- Grated carrot (190g)
- White onion (130g)
- Leek (215g)
- Garlic purée (3g)
- Béchamel (50g)
Cook leeks, onion and garlic purée in one pan with a tablespoon of olive oil.
In a separate pan, cook the peppers and grated carrot with a tablespoon of olive oil.
Season both with a pinch of salt and pepper.
Cook until softened. Allow some crunch to be preserved into the vegetables.
Once all ingredients are softened, combine them together and add the béchaml.
Allow the mixture to cool down before assembling the pies.
Assembly:
Mix water and golden syrup on a 1/1 ratio and leave aside.
Roll the puff pastry into 2mm thickness.
Perforate the dough using a fork all over
Cut into circles of 8'' of diameter
Add 80g of the filling into one side and fold edge to edge, shaping a half moon pie.
Close the puff pastry upwards and use golden syrup mixed with water to stick the 2 doughs together. Weave the dough to securely close, by pushing the dough with your index finger then pinching a small piece of dough upwards and folding it down next to where your index finger is. Move your finger next to the folded area of dough and perform the same action again.
Brush with golden syrup and water mix the top part of your pie. Sprinkle white sesame seeds
Baking:
Bake at 170ºC for 30-35 min.
