Kale & rocket soup

As the cold starts to approach, it’s necessary that we keep our health up. Winter time doesn’t really scream “salad”, therefore our team has developed a delicious soup with an ingredient which sometimes tends to get overlooked— rocket.

This leafy cousin of kale is a staple at salads in Arapina and we’ve decided to make it a family affair by combining the both into a tasty dish that’s sure to keep you full, warm and healthy!

Ingredients:

  • Olive oil
  • Rocket 120g
  • 3 White potatoes
  • Veggie stock 650ml
  • Kale 120g
  • 2 Garlic cloves
  • 1 White onion
  • Salt & pepper (to taste)
Instructions:

- Heat olive oil in a large saucepan over medium heat. Add the onion and garlic, and let it cook until soft, stirring often for about 5 minutes. Add the potatoes and vegetable stock, and bring to a boil. Cover the pot and cook until your potatoes are tender, or for about 10 minutes.

- Reserve a handful of rocket for garnish. Add the kale the remaining rocket to a pan. Bring to a simmer over medium heat, and cook for about 10 minutes. Working in batches, transfer your soup to a blender. Secure lid on blender, and remove centre piece of lid to allow steam to escape. Blend until smooth. Add salt and pepper to taste. Serve in a soup bowl and don’t forget your rocket garnish for the top. Finish with a dollop of raw olive oil, drizzled in a circle around your kale and enjoy!

TIP: If you want to take this up a level on the scale of being healthy, use a medium chain oil to cook such as MCT oil and keep your vegetable or olive oil to be used in its raw state.
